2 tbsp. olive oil
4 boneless skinless chicken breasts
2 tbsp. butter
2 tbsp. balsamic vinegar
¼ cup red onion, diced
1 cup barbecue sauce
1 jar Gina’s Southern Style Gourmet Peach Spread (9oz)
Preheat oven to 350. In a large skillet, heat oil over medium-high heat. Brown chicken on both sides. Remove from pan. In same pan, heat butter until melted. Add onion; cook and stir until tender. Stir in barbecue sauce and vinegar. Bring to a boil. Reduce and simmer uncovered until thickened about 4-6 minutes. Return chicken to pan. Bake until done, about 12-15 minutes.
