Gourmet Pumpkin Chicken Chili - Gina's Southern Style


  • 1 ½ lb. chicken breast or tenders
  • 2 cans white navy beans (14oz), drained and rinsed
  • 1 can diced tomatoes (14oz)
  • 1 can whole kernel corn (14oz), drained
  • 1 jar Gina's Southern Style Pumpkin Spread (9oz)
  • 2 cups chicken broth
  • 1 onion, diced
  • 5 cloves garlic, minced
  • 1 package chili seasoning
  • 2 tbsp. hot sauce
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 tbsp. fresh cilantro, chopped

Add tomatoes, chicken broth and pumpkin spread to crockpot.  Whisk until well combined; add onion, garlic, chili seasoning, hot sauce, salt and pepper. Add chicken, beans and corn. Cook 4-5 hours on high or 6-8 hours on low.
