Gourmet Pumpkin Spread Cornbread - Gina's Southern Style
- 1 cup all purpose flour
- 1 Tbsp. baking powder
- 1-cup cornmeal
- 1 Tsp. kosher salt
- 2 large eggs
- 1 cup of Gourmet Pumpkin Spread
- ¼ cup olive oil
- 1 Tsp. honey
Preheat the oven to 400 degrees. Grease an 8x8 pan.
In medium bowl, whisk together the flour, baking powder, salt and cornmeal; set aside. In another bowl, lightly beat the eggs, and then stir in Southern Okie Gourmet Pumpkin spread, oil and honey. Stir the wet ingredients until combined, and then pour the batter into the pan, smoothing the top.
Bake 25-30 minutes or until toothpick inserted in the center comes out clean.
This recipe makes 12 cornbread muffins, reduce baking to 10 to 12 minutes.
